I always have a starchy standby for the children when I’m cooking a starch dish that they may not like. My Yellow garlic rice is delicately flavoured with Turmeric and garlic which gives their palate a taste of spice, but it also does not have hugely strong flavours enough for them to not eat it. To boost the veggie intake I sometimes add either half a tin of sweetcorn or half a mug of frozen Petit pois or combination of them both (at the same time as adding the water).
½ cup of basmati rice
1 cup of Water
¼ teaspoon of turmeric
½ teaspoon of garlic granules or 1 clove crushed
Pinch of salt
I put all these ingredients into a saucepan and bring to the boil without stirring. As soon as it starts to boil I turn this down to simmering heat, put the lid on and leave it for 10- minutes (checking it every 4 minutes of so). Once all the water has been absorbed, I remove the pan from the heat, remove the lid and put a tea towel over the top of the pan and put the lid back on.
This feeds 1 adult and two toddlers adequately.
