Wok Fried Fragrant Mussels, Jamie Oliver, THE RETURN OF THE NAKED CHEF, PG 154

This is another easy peasy dish by Mr Oliver. Its basically Thai style mussels that, other than the simple preparation, takes around 5 minutes from turning on the hob to the table.

The base is a combination of garlic, lemon grass chilli, coriander, ginger, lime juice and coconut milk. The mussels a lightly fried in a wok in oil to start and then the herbs and coconut milk are added in two stages. The result, assuming the mussels are cooked lightly is fantastic. The soft juice flesh of the mussels is embraced quite lovingly by the astringent lime, the heat of the chillies and the freshness of the herbs and spices. I think the best way to eat these is to forget etiquette and slurp them out of the shell embraced by the delicious juices. I served this with bread but I think it would be best served with sticky rice or sushi rice.
