Alfalfa Salad, Jamie Oliver, 30 MINUTE MEALS, pg 148

This is a quick and easy salad made up of alfalfa sprouts, avocado, mint, cress and lemon juice. Crisp breads are crumbed over the top for added texture.

It a fresh earth tasting salad which is made more interesting by the addition of avocado which makes the texture more mouth pleasing as well as adding an injection of healthy fat and proteins to a salad that would otherwise be a yoga retreat style dish. I did add olive oil and salt at the table as it does have distinctive soil based tones of flavour which are not offensive but like I say, would make me feel the urge to light candles and chant otherwise
